The correct technique makes all the difference when it comes to hand filtering. And to help you get it right the first time around, we have compiled a number of tips:
Insert the filter into the cone and dampen it with hot water; this will ensure that the coffee does not drip through too quickly. Then put the ground coffee in the filter. Rule of thumb: Use 6-8 grams of ground coffee for a small cup, 12-15 grams for a mug. You only need to measure this once and then you can “translate” it in relation to the scoop you use.
First wet the coffee with a little hot (i.e. no longer boiling) water. Only use as much water as you need to cover, allowing the coffee to absorb all the liquid. This is the best way to extract all the aromatic oils. Wait for about 30-60 seconds and then slowly pour on the rest of the water using a circular motion. For a milder brew, pour all of the water into the filter at once; for a more robust flavor, pour in intervals and allow the water to completely drip through before adding more.
Obviously the taste will vary depending on the type of beans, the quantity, the grind, and the quality of your water. It’s best to test various methods and perfect your own.
